Are there any plans for the development of Add-Ons for Couch CMS (paid extras or standard features) that would expand Couch CMS, and if so what are they and the timelines expected?

I'm thinking of things such as Galleries, Stores, and more.

Yup. Work begins immediately after v1.2 (has been ready for quite some time now - just waiting for the documentation to get completed).
