On the particular site where I've installed CouchCMS, <em> tags for italics do not work.

Using the earlier <i> tag works, and using a span tag with style="font-style:italic;" works.

In CouchCMS's CKEditor, how can I either revert the <em> tagging to become <i> tagging...or <span...> tagging?

I am sorry but I don't think we can change the markup generated by CKEditor.
That said, I don't see why <em> won't work for you - you may define some CSS rules and it should look just the same as <i>.
Sadly, I don't see why em won't work either...but it doesn't, no apparent reason. Perhaps I have some sort of hidden conflict on my template-based site. I don't see anything in the css involved (re "em"). I've used css, but that defeats the purpose of an inline editor's easier straight-forward functions. - Thanks for letting me know.
