As you know, to have an editable field, you must add it to the page first and then add the content via the CMS.

Is there any way, that the client/customer or person logged in via the CMS to simply add their own custom field? For example, if they want two columns of text, there is an option for that they can click and it'll take the code I created?

I am sorry but, as of now, we cannot add new editable regions to a template from the admin-panel.
This is seldom a problem because it is the developer of the site (the super-admin) that decides the architecture - not the end user.

If, however, your use-case dictates giving the end-user the ability to add/remove regions on the fly, perhaps you'd like to use the 'mosiac' feature - please see viewtopic.php?f=5&t=11105
