how can I output only a date or the clock from a datetime field?
I can't find any documentation about the field.

Hi,

Use plain <cms:show /> with your datetime region's name and see what you get.
Next use the same name with <cms:date> (https://docs.couchcms.com/tags-reference/date.html) to format it to your requirement.
