Is there a way to add quantities of a product to couchcart, so that only a certain number can be sold?
This would prevent orders being taken when an item is out of stock

Not yet, I am afraid, Tony. But the cart is due for a facelift soon. You can then expect to see in CouchCart most of the features found in full-fledged solutions.

any idea how soon "soon" is (approximately)?

Just have a potential client that needs this feature and couchcart would be perfect for them apart from this

Cannot really commit to a date right now - there is a backlog to clear. It could be a couple of months.
